Banana Stem Dosai Ingredients: Idly Rice - 1 cup Ulund - 2 Tspn Fenugreek seeds - 1 Tspn Banana Stem - 1/2 feet. size Cummin seeds (Jeera) - 1 Tspn Curry leaves little Coriander leaves little Steps: Soak the rice, ulund and fenugreek seeds in water for 3 hours. Take 1/2 feet size banana stem clean and peel of the outer skin. Slice it like round billets and add them little by little to the soaked ingredients and blend it in a mixer grinder. Add required amount of salt and blend it to the dosa batter consistency. Add 1 Tspn Cummin seeds (Jeera) and little curry leaves. Add some coriander leaves and mix it well. Now pour the batter in the hot tawa using a laddle and spread it on the tawa as like dosa. Apply oil on the corners. Flip the dosa to other side. Then the healthy Banana stem Dosa will be ready. Powder coriander seeds, pepper, jeera .cruch garlic and green chilly. Cut tomatoes finely. In oil ,fry mustard seeds, ulund dhal, assafotida,red chilly ,add grinded powder, crushed garlic & green chilly,curry leaf add tomato,salt and cook for 2 minutes. Add tamarind pulp,once it boil, add requierd amount of water. Mix well.Check salt ,if u want add salt /water. now allow it to cook ,do not mix in between. Barley veg soup is a healthy soup and also helps in weight loss. This soup is also good for pregnant womens. Ingredients: Green Peas - 1 Tbsp Carrot - 1 Tbsp Cabbage - 1 Tbsp Beans - 1 Tbsp Cauliflower - 1 Tbsp Barley - 4 Tbsp. Onion - 1/2 Garlic - 7 to 8 cloves Ghee - 1/2 spoon Jeera (Cummins) - 1 Tsp. Coriander leaves Method: Take Barley 4 Tbsp. and soak it in water for 1 hour. Then cook it in a cooker for about 2 whistles. Chop the above said vegetables and cook it in cooker for 1 whistle. Chop 1/2 onion and chop the garlic gloves. Filter out the water from the barley. Filter out the water from the vegetables too. Separate 2 Tbsp. vegetables and 2 Tbsp. barley and grind it in a mixie as a paste. Now Heat the pan with 1/2 spoon ghee and saute few cummins. Add the onion and garlic saute them well. Then add the vegetables. Add the cooked barley. After a minute add some water. Now add the grinded paste to the sauteed. Add 1/4 Tsp. salt. Add the filtered barley water and vegetable stock water. Mix it well and allow it to boil. Add some salt. Add chopped coriander leaves. The Barley Veg. Soup is ready. Ingredients Coriander seeds - 3/4 cup Pepper - 1/2 cup Jeera - 1 cup Red chilly - 1 cup Use the same cup for measuring all ingredients. Steps Dry roast ingredients one by one. Put all together and keep it sunlight for 3,4 hours. Grind it to course powder in a dry mixer jar. Let the powder to cool down for 10 minutes. Store it in air tight container. This can be stored outside for 2,3 months. One tsp of powder is enough for making 1/2 liter rasam. Arisi Parrupu Vella Payasam is made using Raw rice, lentils, jaggery and ghee. Ingredients: Raw rice: 1 laddle Moong Dal: 1 laddle Bengal gram: 1 laddle Milk: 350 ml ghee: 1 tbspn jaggery: 3 laddles cardamom powder: 1/4 tspn dry ginger powder: 1/8 tsp cashew: few raisins: few grated coconut: 1 tbspn Steps: Dry roast raw rice, bengal gram and moong dal. Then soak for 30 minutes and cook it in cooker for 2 whistles by adding 1 glass of water and little milk. Once the rice and lentils is cooked mash it well, add 250 ml milk and stir it well. Heat the pan and melt the jaggery and strain it in the cooked rice and lentils. Add cardamom and dry ginger powders and boil it. On the other hand heat the saute pan with 1 spoon ghee and saute cashews, raisins and grated coconut. Add the sauteed to the payasam and mix well. Now the payasam is ready. Lemon Rasam is a traditional South Indian recipe..can be taken with rice and also as a Soup.. It is very mild and mind blowing. Ingredients Thour dhal -3 tsp Lemon-2 Tomato-2 Turmeric powder-1/4 tsp Castor oil or cooking oil - 1/2 tsp Ginger-1 inch Green chilly-1 Pepper, Jeera -1 tsp each Ghee, mustard seeds, assfotida, curry, coriander leaves Steps Wash and soak dhal for 15 minutes. In a glass of water add dhal, tomato, ginger, green chilly, coriander leaves, turmeric powder , castor oil. Once it boils close and cook for 3 whisles. Open and mash it well .Add some water and salt.Powder Pepper and jeera, and add it to the rasam. Put in flame and cook until it starts to first boil. Steps Wash the chicken. In oil fry mustard seeds, fennel seeds add onion and fry for a minute. Add crushed ginger and garlic cloves and fry for a minute. Add little curry, Coriander leaves. Add chicken, mix well and cook in open lid for 2 minutes. Add turmeric, chilly, Coriander Powders, salt and mix well. Close and cook in medium flame for 5 minutes. Don't add water. A North Indian style Channa Masala recipe shown in one pot one shot method, so it will be very easy for morning cooking and also a large quantity for a party. Ingredients Channa - 100 gm ( wash and soak for 10 hours, drain out the water) Onion - 3 no - 1 cup finely chopped Tomato - 4 no - 1,1/2 cup grinded Ginger garlic paste - 1 tsp Turmeric powder - 1/4 tsp Coriander powder - 2 tsp Chilly powder - 2 tsp Garam masala - 1/2 tsp Dry mango powder - 1/4 tsp Salt, sugar, oil, butter, Coriander leaves, bayleaf, cinnamon, cloves, jeera. Steps In 4 tsp of oil fry 1 bayleaf, 2 cinnamon, 4 cloves, 1 tsp of jeera, add onion and fry for 2 minutes. Add ginger garlic paste, mix well, add turmeric, chilly, Coriander Powders and mix well. Add tomato puree, soaked channa, salt and add 1 glass of water. Close and cook for 10 whistles. Wait to pressure down and open. Mash some channa as shown. Add garam masala, dry mango Powders. Check for salt and add if needed, check for consistency and add water if needed. Add 1/2 tsp of sugar and allow it to boil. Add Coriander leaves and a tbs of butter and switch off. If you don't have dry mango powder you can add 1 tbs of lemon juice after cooking. Here in Salem, this watery Mutton gravy and fry done by the mutton taken out from the gravy along with hot idly, dosa, egg dosa is a regular Sunday morning breakfast. Ingredients Mutton - 1 kg, along bone and liver. Small onions - 25 Tomato - 1 Ginger garlic paste - 2 tsp Coconut - 8 tbs Turmeric powder - 1/2 tsp Pepper powder - 1 tsp Mutton kulambu powder - 8 to 10 tsp. Refer for Mutton kulambu powder https://youtu.be/w8Tl_kiWNAI If you don't have this powder use 6 tsp Coriander powder, 3 tsp chilly powder. Oil, salt, curry and Coriander leaves Steps Crush the onions roughly, without water. In 5 tsp of oil fry the crushed onion for 2 minutes. Add ginger garlic paste and mix, add tomato and fry for a minute. Add Mutton and mix well. Cook open for 2,3 minutes, until it changes the color. Add turmeric and Mutton kulambu powder. Mix well. Add salt, 2 glass of boiling water and cook for 8 to 10 whistles. Grind the coconut along little water to a smooth paste. ( if you use Coriander and chilly powder, add pepper, fennel seeds, jeera, Cinnamon, cloves.. Each 1/2 tsp along with coconut for grinding) Take out the cooked Mutton from the gravy, for fry. Leave 7,8 pieces in gravy. Add coconut paste and add curry leaves, pepper and allow it to boil for 5 minutes. Add Coriander leaves and switch off. For making fry Mutton from the gravy, salt, pepper, oil, green chilly, red chilly, curry and Coriander leaves. In 5 tsp of oil fry slited chillies,curry leaves, pepper, add Mutton, little salt and fry. Add 1 small cup of Mutton gravy and cook for 4,5 minutes in low flame. Add Coriander leaves. Ingredients: Basumathi rice - 1 cup.(200 gms ),egg-4, onion-1/2, carrot -1, beans- 6, coriander leaves,salt,oil, pepper powder- 1 tea spoon,green chilly-4 ( or you can use green chilly sauce a tea spoon ) , soya sauce- 1 tea spoon. Steps: Cook rice 3/4 , keep it to cool for 2 hours. In 5 spoons of oil fry, beans for 1 minute, add carrot and fry for a minute, now add onion ,green chilly, pinch of salt and fry for a minute. Foxtail millet in Tamil known as Thinai is a healthy, fiber rich millet. Thinai and honey are favorites for Lord Murugan, so offering a prasatham using this will be suitable for Pooja on Thai Poosam, Pangani Uthiram, Kirithikai, Sasti, Tuesdays. Ingredients Thinai - 1 small cup ( 100 Gm) Moong dhal - 1 tbs Jaggery - 2 cups Boiled milk - 300 ml Honey - 2 tbs Ghee, cardamom powder, dry ginger powder, cashews, dry grapes, coconut. Steps Dry roast moong dhal and thinai separately. Wash and soak both together for 20 minutes. In 3 cups of water cook them for 3 whistles. Open add milk and cook in low flame. Melt jaggery along a cup of water and filter it to the Kheer. Add 1/4 tsp of cardamom powder, 1/4 tsp of dry ginger powder. Allow it to cook for 2 minutes in low flame. You can adjust the consistency by adding little more Boiled milk. In 1/2 tsp of ghee, add a tbs of coconut, fry and add it. In 1/2 tsp of ghee fry cashews, dry grapes and add it. Buttermilk Gravy using Ash Gourd and Curd. This is a famous and an important gravy for lunch in hotels, mostly in South India. Ingredients: Chopped Ash Gourd - 1 cup Rice - 1 spoon Bengal Gram - 1 spoon Tur dal - 1 spoon Jeera - 1 spoon Coriander seeds - 1 spoon Turmeric powder - little Grated coconut - 4 to 5 Tbspn. red chilies - 4 green chilies - 4 Coconut oil - 2 spoon Curd - 200 ml Steps: Soak the Rice, Tur Dal, Bengal gram, jeera and coriander seeds. Cook the Ash gourd pieces for 4,5 minutes with water adding little turmeric powder. Grind 4 tbspn grated coconut with 4 green chilies, 2 red chilies, coriander leaves and soaked ingredients. Now add the fine paste to the cooked ash gourd, and adjust the consistency by adding little water. Add required amount of salt. Whip the curd in a mixie. Once the gravy Boiled for 2 minutes, switch off the stove and add the whipped curd. On the other side heat the oil and saute mustards seeds, red chilies and curry leaves, then add it to the gravy and mix well.
